Depending on the mechanism, some promoters are required to carry there own insurance for the fight.
I've included a link to a youtube video with Tito Ortiz where on earth it is said that no fighter in the UFC is provided near any kind of insurance through the organization. Dana White claims it is too difficult to insure his fighters. It happen at the 3 minute mark.
