Answers: Always report this to YOUR insurance company. They will handle it for you. That is what you reimburse them premiums for. Allow them to do their job.
A similar thing happen to me - well, a car drove forwards into the stern of mine whilst looking behind them!

They admitted liability straight away and as they worked for a garage said that they'd do the repair work, furnish me a hire car, etc etc.

I still spoke to my insurance company who told me that ultimately it was my choice but the other garage would solely be working for themselves and may only repair the damage they could see, whereas the garage the insurance company would use would literally check everything and not purely repair the bashed up bumper.

In the end I go through the insurance channels as it wasn't going to make my no-claims shift up.

DO NOT PAY FOR THE CAR TO BE REPAIRED! Go through the insurance. If you give attention to that he will pay after, you are sorely mistaken.. There are so many unreliable relations in this world and just because he admit fault to you , that wont work with the garage if he denies liabilty when the work is done. You will be vanished to pay the bill. +Take my advice it happen to a member of my family and at hand is nothing you can do. You areliable for the excess but if you have a dutiful insurance co they may reimburse you when the third party pays up. GOOD LUCK
If you don't advise your insurance company and he claims against you, you can be liable as there is no evidence from your side to read aloud that you have been surrounded by an accident. Basically it looks like your trying to skin something so it will go against you

If they guy has taken responsibility, and u think he's trustworthy adequate not to do a runner, then go to your garage and bring a quote for the repair and give it to him and ask for the cash.

The problem here is that he may or may not pay, or if within are extras found when the work is done he may quibble about their requirement, or claim you have gone to an expensive garage. Put it through your insurance and they will sort it, probably including recovering your excess. If they don't then you are lone chasing a bit of money, not the whole thing
