Put the family friend as the registered owner, "we" as the legally recognized owner. Then tags and insurance will be "family friend" responsibility.
The proper thing to do is to title the car contained by your friend's name and list yourself as the lien holder on the title. That process she is the owner of the vehicle and she is responsible for the insurance. (you should require her to show you proof of insurance)
